Pan con Tomate: The Catalan Bread Experience

In Catalonia, the day begins with Pan con Tomate. It is served in every café, at every breakfast table, before every meal. Visitors from around the world taste it and marvel at its depth of flavor, its rustic elegance, its perfect simplicity. It is bread rubbed with tomato. That is the whole thing.

Ingredients

  • 2 thick slices of rustic bread, toasted
  • 1 ripe tomato, halved
  • 1 clove garlic (optional)
  • 2 tablespoons good olive oil
  • Flaky sea salt

Method

Toast the bread until golden and slightly crisp. If using garlic, rub the cut side of the clove firmly across the warm surface of the toast. Then rub the cut side of the tomato over the bread, pressing so the juice and pulp soak in. Drizzle with olive oil and finish with a pinch of flaky salt.

Use a good tomato. Use a good olive oil. Everything else is just bread.
